700 different coffee farmers contribute their harvest to the Alemu Bukato washing station that sorts and processes this coffee. Once the coffee has been fermented and washed, it is then placed on to raised beds that have been designed to ensure proper air circulation and temperature control in order to optimize the drying process.
It has been estimated that there are almost ten thousand different varieties grown in Ethiopia! Because of this, genetic testing on each variety is nearly impossible, and so the name “Ethiopian Heirloom” has been given to cover the plethora of varieties grown there.
