Over 1,000 small holder producers contribute their cherry to four different washing stations owned by one private owner in the area. All of the farms are growing their coffee between 1,800 and 2,100 MASL, and delivering their crops to be sorted, de-pulped, fermented for 48 hours and soaked for another 24, before washing and drying on raised beds. The parchment undergoes constant sorting and turning during the drying process to ensure optimal quality. This washing station is privately owned and pays premiums above market value to the farmers who bring their cherry to them. Along with paying premium, they insist on clean and sorted cherry, which will go through careful and meticulous processing to ensure quality in the cup.
