The coffees here develop clean sweetness and sparkling acidity due to the combination of rich volcanic soil, good elevation, and cool average temperatures. About 90% of the coffee from this area is cultivated along volcanic slopes that surround Lake Atitlán. La Laguna comes from the APROCAFE co-operative in San Pedro where they follow organic practices, paying special attention to the soil and water. The producers use an organic fertilizer, vermicompost, on their crops, and do all the harvesting by hand, only picking the ripest cherry. This coffee is smooth, approachable, and a great example of what we love about Guatemalan coffees.
