More than 300 farms make up Las Faldas, a large estate of 1,500 hectares. Many of the farms are still owned and operated by the great grandchildren of Maximiliano Perez Rosales, who established Las Faldas more than 100 years ago. The cherry is brought to La Esperanza, a mill with a history of receiving and processing cherry with traceability in the Antigua area. The fermentation tanks at La Esperanza are located inside an enclosed building and force fed the same hot air that they use to heat the mechanical dryers. They do this to maintain a consistent temperature inside the building while the coffee is fermenting. This coffee has been dried on patios in the sun after being mechanically washed.
