The Mirichu Factory is a part of the Mugoiri Farmers Cooperative, which has more than 4,000 active members who contribute their harvest.

Coffee from this region is typically known for having heavy sweetness, a really nice, juicy mouthfeel, and sparkling acidity, and these qualities are highlighted even more during processing.

In Kenya, coffees are given classifications based on the size of the bean, and given a letter grade that corresponds with the size of the bean. Coffee is sorted by using different sized screens, separating the beans into different size lots. At the top of the grade scale, we have “Kenya AA” and “Kenya AB”, being the largest, and often considered the best quality. “Kenya AB” consists of both A and B coffee beans. The A grade is sorted using a 6.8mm screen, while the B is sorted using a 6.2mm screen.

Traditionally, coffees in Kenya are processed using what they refer to as a “double wash”, which means that beans are fermented underwater, washed, and repeated for a total fermentation time of 48-72 hours.

This processing method contributes to the beautiful, bright, and clean flavour profiles that we have come to expect from Kenyan coffees!
