This coffee represents a distinct taste profile that celebrates the varieties and processing of the Popayán municipality in Cauca, Colombia. Family owned farms have organized into an association called ACEC, which helps these families not only get their coffee to market, but also with grading, and quality control.
There are around 500 families that are represented by the ACEC. The organization is currently implementing new programs designed around improving the quality of coffee growing and processing, in addition to considering the environmental impact of coffee cultivation in the area and finding ways to reduce it.
WHY DOES THIS COFFEE TASTE THE WAY THAT IT DOES?
- The association ACEC represents 500 family farms in the municipality. This coffee is a representation of the production of this area.
- Classic Colombian varieties of Caturra, Castillo, Colombia and Typica really determine the flavour profile of this lot.
