Ruben Dario, his wife Ericka, and their three daughters are passionately involved in their family farm. Through strict guidelines on pest control, and a focus on proper shade management, Ruben’s coffees always out perform others in the area. His three daughters are in charge of their wet mill, where the coffee is de-pulped before drying. 100% of the mucilage is left onto the cherry before dried on raised beds. Exporters in the area call this style of honey the Black Honey, or Full Honey.
The mucilage is then used as organic fertilizer for the coffee plants, ensuring a healthier growing season and a better quality and more sustainable production.
WHY DOES THIS COFFEE TASTE THE WAY IT DOES?
•This coffee tastes very classic, approachable and sweet.
•This is the result of the catarrh variety grown on the farm, which is known for a more approachable flavour profile
•The sweetness and cleanliness is also a result of the proper ripeness in picking, and also sorting at both the wet and dry mill (taking out quakers or defective beans)
•Black Honey means that 100% of the mucilage is left on as it begins drying on raised beds.
